Some Additional Observations August 10, 2010 Les (Seattle, WA USA) A couple of notes in addition to comments from other reviewers:
1. This is a single point "calibration" which is not checking the overall operation. At least two points are needed to check calibration of devices that respond linearly and those should be at the low and high ends of the range being checked. I did the manufacturer's suggested "calibration" in an ice bath and corrected the readout to be 32 F. However, the readout was low when checking the temperature of boiling water. After correcting for current atmospheric pressure it should have been reading 211 F but the thermometer only read 209 F. Not enough of an error to be concerned about for my cooking purposes but am not sure how great the difference would be near the upper end of the operating range. If checking the temperature of hot cooking oil, for example, I could see how it could easily be 10 to 15 F off, possibly more. I am not at the point of returning this but if the error increases within the warrantee period they will hear from me.
2. I have found that the response seems to be quicker at higher temperatures. I intentionally tested some chicken early and it took longer to get a stable reading at 135 F than when the chicken was 165 F. It took a lot longer to stabilize in the ice bath (15-20 seconds) than in boiling water (about 8 seconds).
it works July 27, 2010 xfooey (Brooklyn, NY) I used to use one of those big dial, big needle push it in, leave it in while roasting thermometers, but figured I should upgrade and be more techy so I got this. It works. I didn't calibrate it, but the roast came out the way I like so what the hey. I also like wearing it around on my apron. Makes me look like I know what I'm doing. The dinner guests are always so impressed. I guess I now need to get one of those big poofy chef hats to solidfy the illusion that I know what I'm doing.
ok July 21, 2010 average jo (san francisco, ca) i orig bought a sim one, diff brand from target for a few bucks less. thought the reading was too slow so i returned it & ordered this instead per a review on cooks illustrated mag (they said they tested many instant read therms & this was the best deal w/ a 10 sec read time). i can't seem to get readings that fast with this one either. 10 secs sure would be nice but i think it took over a min to get to somewhere around the temp it was at, at that instant. or maybe i'm not using it correctly?

Husband grills out almost every weekend and this thermometer works well with chicken or ribs and he likes it.

So easy to use, and accurate. It doesn't short out if it accidentally gets wet or touches the side of the pan, as is the case with the similar style by Taylor. Bought 3 more to give to my kids.
